We have shared two recipes below that are a staple lunch idea for our children and are both nutritious and delicious!
Sweet Potato & Black Bean Quesidillas
Recipe:
1 Sweet Potato & Turmeric cube (thawed)
1/3 cup black beans
1 cup shredded cheese
whole wheat tortillas (or tortilla of your choice)
Spread the sweet potato puree on one tortilla, add black beans and cheese on top. Bake at 350 degrees for 10 minutes.
Cut and enjoy!
Chocolate Beet Banana Bread
Recipe:
1 ripe banana
4 Beet cubes (thawed)
3 Apple & Cinnamon cubes (thawed)
1/4 cup coconut oil
1 1/2 cups whole wheat flour
1/3 cup cocoa powder
3/4 tsp baking soda
3/4 tsp salt
2 tsp vanilla extract
1/2 cup chocolate chips
Lightly grease a bread pan. Be sure to thaw the beet and apple & cinnamon cubes ahead of time.
In a large bowl, mix the flour, baking soda, salt and cocoa powder together.
In a smaller bowl, mash the banana, add coconut oil, the beet cubes, the apple cubes and vanilla.
Stir the beet mixture with the dry ingredients, and add the chocolate chips as well.
Pour the batter into the pan. Bake for 40 minutes at 350 degrees.
Let cool and enjoy!
